Butternut Squash Stuffed Shells

Happy fall! To celebrate the seasonal organic foods Maryland has to offer this autumn, we are going to be sharing some of our favorite dishes! All of these foods will be vegetarian or have vegetarian options, and we will do our best to incorporate some gluten-free and vegan recipes as well! This week the recipe is…

Butternut Squash Stuffed Shells! This meal can be a great side dish or work as a main course, making it just as versatile as the seasonal squash. The recipe uses organic butternut squash and many of the spices and other ingredients can also be found organic! Don’t have butternut? Acorn or winter squash works just as well.

On a serious note, many of the harmful pesticides non-organic farmers use do not simply wash off when you are prepping your meals. This can be especially serious for families where there are children or pregnant mothers. Pesticides, like the commonly used agriculture insecticide chlorpyrifos, can cause brain damage, neurodevelopmental deficits, learning disabilities, pediatric cancers, asthma, ADD/ADHD, and is linked to autism, Studies have found that children who do not eat organic foods have pesticide metabolites in their urine. To protect our families, banning worst-actor pesticides like chlorpyrifos can ensure we have one less thing to worry about when we shop for our produce (especially during the holiday season!). There is a database linked below if you’d like to learn more about these pesticides and how they affect our environment and ourselves. We vote with our forks every day, so vote for better and safer farming practices by taking action below!

This recipe is below in a convenient little page that has the ingredients and instructions for this delicious meal!
